Editing Theme in C5.7.2.1

I have had minimal success in editing the theme I created based off of the Elemental theme. It works! However I'm not sure which of the 27 main.css or main.less files I am supposed to be editing (why are there so many files named main.css or main.less!?) if anyone could point me in the right direction that would be phenomenal.
There should only be one main.less file. It includes all the LESS components from within the theme. Ideally you wouldn't really have to mess with this file at all – you could just edit the .less files that it includes. They should be reasonably well named and organized within the build folder.
