Setting up renting out of stock with E-Commerce module

I was wondering if it is already possible to rent out stock with the E-Commerce module?
What I want is to link a specific stock item to a calendar for customers to see when this item is available.
I would also like to add my own payment option EFT for the customers to make payment electronically. Is there any help on this or how would you go about doing these changes?
