customized draft of "new" site

I want to draft a new version of my current site. I have just a single URL edc-usa.org and a simple theme (Slate). I would like to make changes to the page layouts where they are all left-sidebar; new page names and site map, and different colors and fonts.
The current site is very small and I can reconstruct the content. What is a good approach to getting started?
