Deleted My_Site_Name from Global Scrapbook

Trying to update the Site name in the Header did not work from site wide settings, Using the global scrapbook updated the Site name very easily, but had the unexpected side effect of disabling the navigation bar in the theme I was using.
So.... I deleted the My_Site_Name from the global scrapbook and the site reverted to displaying the old name and the nav began working again.
Now I can't figure out how to put the My_Site_Name block back into scrapbook so I can experiment with the problem.
Anyone have suggestions for a newbee??

p.s. The site name contains an ampersand. Would that possibly be causing the problem?
