An interesting trick. I was thinking of peeling off a table manipulating script from a dashboard interface I developed and putting it into a block. You have got me thinking about ways to add the sort of responsiveness you describe to it.
I had originally considered making a "responsive table builder" addon. But I decided instead to just make a simple How-to so others out there have a starting point for working with tables and making them responsive (in their own way) using only CSS!
