Simple question from a newbie to Concrete5, where do you actually change the default Title which currently states My Site::Home to a title that reflects what the website actually is about.

You need to change the site name and then set a title tag for that page.
In the intelligent search top right type "site name" and you'll get to that.
On your pages, hover edit, click properties and go to the custom attributes tab and add the meta title. You can then specify your title tag text.
