Just create a new auto nav and then tell it what content pages you want in it...
Is there a way to manually change what pages you want to display in each navigation? right now you can have either top navigation or you can have a sub navigation. is there a way to mix the 2 navigations? maybe have one page there but don't actually "publish" it until a certain period.

You could make a few attributes. When a attribute is checked on for example, it will show up in a menu. Like the exclude-nav one, but then the other way around..
you can "hide" a page if you activate the advanced permissions model.
There you can select a start and end date..
