Advise on C5 strategy for running 3 webpages

I need to run 3 different webpages for different businesses I own. I am building the pages in C5 and I am wondering what my best approach is. Since I just ran into issues again on my GoDaddy hosting I am going to finally switch hosts and I am thinking to maybe go to a VPS solution to future proof my setup. I can’t have the sites go down and they are big parts of the business.
Should I run the pages of one C5 core and then run the 3 different domains and sites in a muli-site install or am I better off with 3 individual installations. The sites do not share content. I read through the multisite document I could find but it was not all so clear to me on how to actually go about this.

I'm running over 30 sites on a VPS (through A Small Orange), each with it's own installation.

While there is a minimal amount of extra work to install multiple times, and to keep up with updates, keeping sites in silos is my preference. At least if something goes wrong with one site, I don't lose everything.

I also keep sandbox sites under sub-domains for more complex client sites to work through development and a general sandbox site to test upgrades.
