In regards to selling products: Is there a way to list books, for example, where a customer can select individual books and queue them in the order they want to receive them? And would this be possible with categories of books as well?

click on "marketplace" and you'll see an online shop built on top of concrete5.

I don't know what you're trying to do with a queue for books, sounds a bit wired to me and probably won't be supported out of the box.

Customizing Concrete5 isn't difficult though..
