Commerce adjustment

I'd like to use the commerce add-on for a mail order only website, and would like to change a few things that I can't seem to find.
Mainly I'd like to remove the add to cart feature, and any cart references and links. I have tried editing the code but its a little beyond me unfortunately, any ideas?
