How and where can I customize the content of the help panel (the window that opens when clicking on the sticky help button on the right)? I would like to add some customer-related information ...

It looks like this loads from /concrete/elements/help/dialog/introduction.php so you could create that file in the application directory and clear your cache and it should load your version.
