Default new page theme

Hi!
First post here! So far my experience with concrete5 has been very good. There is one thing I can't figure out. First I created a new theme which you can see herehttp://bistroespresso.com/ (still some work to do in the main area) all is working great no problem.
The issue is when I create a new page by using Add Page. When I do by selecting Full, it uses my custom CSS (good) but adds the default slideshow image and overlay header nav which I don't want. Concrete example here :http://bistroespresso.com/index.php?cID=82...
I look into Help sections and the files to find out where the Add Page module is taking its information to determine the default theme to be used when adding a new page.
I also searched the DB for some references to no avail.

1. Login as an admin
2. Go into Dashboard -> Pages & Themes -> Page Types
3. Find the full page type in the list, and select "Defaults"
4. You'll probably see the image that you don't want, and the header nav that you don't want, listed in this page. Delete those from the page, and the next time you add that page they won't be inherited.
