I could be missing something obvious here. But are there any documents that break down the various default blocks and explain them in detail?

The info within the developers section is vague to say the least!

I've been looking for the same thing. There was an indication that documentation is being overhauled in preparation for 5.4. If you are interested, the API documentation is here.
