Ecommerce addon: making the products sortable

Hi I just have a general "how to use" question which I am not sure to post here, or in the support section of the addon. However this isn't a bug, more of a "how to use".
I was just wondering what is the best way to go about making the products "sortable".
Originally I wasn't going to assign a page type for each single product, but this seems like the only way to make it sortable by display order.
However I am probably going to have a few hundred products, and if these all end up under "catalog" in the sitemap it's going to be a huge list.
Is there a (simple) way to put categories (say by a product attribute) under the catalog in the sitemap to make things more organized (into smaller groups, like "men", "women", "shoes", "t-shirts" that kind of thing) OR is there a way for the clients to control the display order under the Products Admin?
