I am developing a website that has accordion to show info for each paragraph heading (so the page isn't super long).
But I can't figure out how to make it easily editable for the client without them seeing all the code. Any ideas?

My advise is to take a look add the block made by Vivid.

You can use their approach to create an accordion. You will need to make some customisations but it gives you an idea how you can start.
Note that this is an 5.7 block.
