Excluding a topic from a page list

I'd like to render a page list that excludes all (blog entry) topics but one. (This page list will also use a custom template.)

I can grasp how the filtering is done, but have no idea how to actually apply this. How do I go from having an array of filtered Page objects to rendering an actual block on the page?
