I am building a model agency website and there will be hundred if not thousands of images, is their no way to use folders in the file manager as the grouping function is a bit difficult

you use sets to organize images and other media resources. each file can belong to multiple sets and can be public or private.

go to into file manager and check a few files. then go to the little drop down bar above them. you'll see a Sets option.

[edit] it's also possible to reference external resources outside the site, which means that you could organize them via ftp in that case [edit]
