Mail: encoding error.. Can i change it?

I found the mail helper documentation (http://www.concrete5.org/documentation/developers/helpers/mail/) and try to send mails with it now.
The problem is the encoding. For example I write the message "Küche" then it will come to my mail account as "K�che".
I guess the reason is because the mails are sent with utf8 encoding while I would prefer to use ISO-8859-1 encoding for emails. How can I change that?
