organize pages in sub-levels, but keep root URLs

I want a dropdown menu using the autonav, but I want all the article links to be in the root.
So the site map is like:
/italian foods/pizza-vegetarian
/italian foods/pasta-with-meat
/american foods/rib-eye-stake
/american foods/hamburger-with-cheese
This will be the autonav, BUT clicking on an article takes you to:
/hamburger-with-cheese
/pasta-with-meat
I have set my "additional page URL(s)" underneath "Canonical URL", so how do I use that additional url as my prime & ONLY url?

Make your "folders" with External Links.
Name: "Italian Foods"
url: javascript:void(0)
Then Create a page in the root (under home) and drag it under the external link.
You now have categories in your autonav, but completely SEO friendly root URLs
