Quick steer needed for Composer blog content - where is it defined and how to add elements

When you edit in composer there are some predefined elements to the edit window, eg short description, date, blog content, thumbnail etc.

The display template doesn't contain definitions for these elements.

I can see that the thumbnail is derived from the 'blocks/image/composer/header.php

I cant see where 'Blog Content' is defined.
It is not in blocks, or composer overrides, page type settings,or template files etc.

Have read thru docs on composer and I havent found the answer there

So Q1: where is it!?

q2. How do you add elements to the composer screen? Eg a good example is I want to add a youtube block to the composer edit screen.
How is this done? Thru interface? Thru adding custom code?

Appreciate a steer on either question.

I should add that when adding a block to composer like below by editing the page type defaults I have blocks appearing, but they do not show the composer settings when clicking on them.
EG following these steps from here:http://bit.ly/ZR8pDa
- go to the "Page Type" menu item
- select the 'default' button for the page template you want
- edit the page and add a content block e.g. in the main area
- on the content block, click and select from the popup menu 'composer settings'
- turn the checkbox on and give the content block/field a name
- save, then save the template page

I do not get the composer settings menu option on the blocks I add
