Theme Styles Overriding Dashboard Styles

I am using the Dark Chocolate theme that comes with C5 for a new site and unfortunately, the theme colors are overriding the dashboard colors.
My biggest issue is the text in Edit Mode and on many of the selection pieces throughout the Dashboard are "white" on a "white background" - I would like to change it to a charcoal or black color.
I've tried several things to no avail using CSS. It's still white on white, making it difficult to adjust. Thoughts? Ideas?
I am fairly well schooled in CSS but this one has me stumped.

P.S. If someone can just tell me the divs and classes, I'm sure I can do this ... just don't know what they all are called and how they affect the styles ... or point me in the direction of a resource of same.
