www causes old site to be displayed

If I include www. in the domain name, an old version of the website is displayed. How can that even be?

As a workaround, I put in a manual redirect to strip the www. off of incoming domains, but would like to know why the site is behaving that way (showing antiquated versions of the pages).

Clear your cache. It may be overkill, but I've turned off the cache settings and saved the changes - cleared the cache - then turned the settings back on.
