Downgrade from 5.8 to 5.7

Hi we built a site in 5.8 on a clients hosting - client has decided they no longer wish to manage their own hosting, and want us to take care of it - which is fine, however the hosts we use don't offer the higher php version - anyone tried downgrading, or know of a guide to the process?
I'm running two 8.1 sites with php 5.6
