I use add-ons such as Mailler. and all emails are sent from concrete5-noreply@airsoftmanitoba.com

How can I change this default across the site?

in your site.php add:
define('EMAIL_DEFAULT_FROM_ADDRESS', 'noreply@airsoftmanitoba.com');

thank you. I figured it was a simple force define but just wasn't sure where to find it :)
