Header Nav and default menu

I’ve noticed that when I install C5 with sample content, the behavior of the top menu is replicated across all sample pages. Eg if I change custom template of the menu block to none, breadcrumbs or "header menu" on one of those pages, the same change will take effect on all other sample pages.
However the above is not true for any other pages added after the install. If I add 10 new pages, I would need to change menu's "custom template" of each new page individually.
Also I've noticed that if I change menu's properties (via edit option) on a page (eg display all sub items), those changes would only apply to that page.
How can I make the default menu to have same properties and template across an entire site?
