Hi
I want to move a site that is built in concrete 5.6 to a new hostserver.
Can I simply down- and upload all files and move the database without installing concrete?
Because when I install Concrete on the new server it would be 5.7 and i would not that for now.

Yes. You will need all the files in the site, not just the /files directory and then you will need to edit config/site.php for the new server and database and import the SQl to the new database. There are several howtos about doing this and also some noted in the docs pages for my Backup Voodoo addon.
