Moving a Site - Disable and Clear the Cache

I'm wanting to have a go at moving my Concrete5 site, and am going to follow the guidance in the documentation, but I'm unsure of how to go about disabling AND clearing the cache.

Any pointers would be very much appreciated.

Unbelievable!

I've just posted the above - then gone on to "tinker" about with the innards of C5, and I've found the answer!

It's in "Dashboard", "Sitewide Settings" if anyone else is looking for it.
