updating concrete on a new server with old database

This is probably a silly question. I've got a site that is a few versions back. I want to change server and install the latest concrete as I'm updating the theme. Will a new version of concrete work with an old versions database?

No, you need to run the updater to make your database compatible with 5.6.1 and also may need to run some intermediate stages, as per

Whether you update then move, or move then update, or (my preference), copy to an intermediary on a development system, run all the updates, test, then copy again to the new server, is pretty much up to you.
