VPS set up

I'm currently trying to speed up a site for a client and it looks like the only option we have remaining is to try a VPS. On the current host provider - one of the best in Ireland Blacknight - I have the option for 4 operating systems.

Which one should I go for?
Windows Server 2003
Debian 5
CentOS 5
Fedora

I've never set up A VPS before so any advice would be appreciated.

I would definitely go with CentOS, if you need a free control panel to manage your sites I would also suggest Kloxo and Webmin, for a firewall I would go with ConfigServer Firewall (csf).
