What's the optimum C5 Server Config?

We are currently looking to move our site from shared hosting to an internally hosted server.

What is the optimum config for setting up the box?

I'm assuming that the latest versions of MYSQL, Apache are best but what flavor of Linux would you recommend and are there any other components that would optimise performance?

We noticed a good performance increase after we installed APC on our server.

also, APC still has memory leaks, so using it on very active/large sites is not recommended as it can crash your server,

I've been looking around and it seems that the Oracle Linux with Zend Server is a popular stack. Would we get any benefit from APC on top of this?
