Strange request : 5-8 hours of work, rebuilds with some teaching.

Hey guys,
So this will probably be considered a strange request but figured I'd throw it out there anyways.
Long story short, the developer I was working with previously disappeared on me and I no longer have access to the theme files and other stuff I paid him to build. We've created seven sites over the course of the last year and upon upload, my inexperience led me to never request the developers files. Lesson learned and Im moving on. I was initially going to pursue legal action but it makes less sense the more I think about it. I've already changed passwords for EVERYthing. I always paid him on time and thought we had a good thing going - I really have no idea what I did to push him away.
In that time, I was teaching myself html, css and scratching the surface with javascript, jquery and php. I'm very interested in expanding my knowledge but have trouble learning this stuff due to my approach.
The situation I'm in now, one of my clients servers crashed and I need to move it. With the above noted, I cannot deliver on this request and have to re-develop all 7 sites to avoid getting sued. I've followed enough tutorials in regards to concrete5, phpmyadmin and databases to know, in the simplest way, how to install and setup c5 on a new server. Except I'm running into some error messages that I just don't know how to deal with, which has brought me here.
Ideally, I would like to pay someone who is well versed in this space who can work with me. If I had things my way, Id like to have a few skype meetings where Im somehow sharing my desktop and we work through things together. I ask a lot of questions and would imagine it would take a little longer as result. I will happily pay and hope to build a relationship with someone of whom I can reach out to for help when I need. The reason I'm doing this, instead of posting on the forums, is time. I can't keep my clients waiting any longer and need to get things done.
This is my first time on the board, and understand that could raise trust issues. If you are known to the board and theres someway of me validating things - I will pay upfront. Happily.
If this sounds reasonable to you, and you are comfortable enough with mysql, php, servers and the like - please let me know your hourly rate and lets make some magic happen.

We have a server we can move you to, and give you cpanel access.
I just migrated several sites from one server to another, but if you no longer have access to the databases and theme, not sure what we would be migrating.
Hit us up and let us know. One of us, if not both can help you out but answer the questions previously posted so we know what we are dealing with.

Server crashes and data back-up scenarios truly frighten me :(
I realize that this advice may be too late for your current difficulties but... I recently bought the Voodoo backups from the marketplace for my key sites, and have determined I'll pick up more licenses. Super fast, very easy to use, and now I'm downloading full site and Db back-ups zipped to my back-up drive so I'm ready to just upload & re-install to another server if the worst should happen. Great peace of mind.

Could you be a little clearer?
1- What kind of websites are you talking about? a few pages or really big stuff? Ecommerce? Blog?
2- Do you have anything of the original websites? Static files? Templates? Anything?
3- You say you can't make your client wait any longer but what kind of deadline are we talking about?
4- What kind of errors are you getting with C5?
I think answering this questions would allow people to offer better help.
