Can I limit permissions for an "Editor" group?

I don't see an 'Editor' Group with limited permissions.
I also don't see any way to limit the permissions if I add a new user to the Admin Group.
Is there a way to add a new user who can edit the site without giving them the ability to destroy it as well?
