I don't think 5.6.1 is available for automatic updates.
Normally there is a period of settling in before an update is pushed out.
You may well find that it will be released when 5.6.1.1 is ready as this will fix any minor bugs. Sorry I cant give a date but if you watch the C5 blog or Developers page or check in your system on a regular basis.
