Customer Choices Attribute in eCommerce

I am unsure how to create a customer choice attribute that will show up under customer choices as an option to add instead of me having to type in a new option each time I enter a product.

Does anyone know how to do this? I have no problem with product and order attributes showing up...but I can't get the customer choices ones to show up. :(
