Customising Plain Yoghurt Colours

Hi All
I have a site I am developing on XAMPP and I am trying to change the default colours on Plain Yoghurt. When I go to Pages & Themes and look at either Preview or Customise I see the site with the colours I want but when I go back to the site nothing has changed. I have hit Save and the Dashboard tells me the theme has been updated and the Theme is active.
I know I could go in and fiddle with the CSS but I really want to know what may have stopped this feature working or what mistake I have made.
I am using 5.4.1.
Any advice or tips greatly appreciated.

Just a little update on this, it seems that it is only Plain Yoghurt that is effected by this, other styles are happy to change via the dashboard method.
Can anyone tell me how I go about changing Plain Yoghurt? I am guessing it does not want to change as it is the default theme!

yeah Ive just struck this too. Very annoying. C5 only provides 3 templates up front, and then one of them isnt even customisable without CSS.

Mitchiedog there will be away to do this, I am guessing copying out the default theme from the core and going from there but I am not sure what is the right way forward. Hopefully a Guru will pop up soon, there are lots of them about this fine community :)
