Create a page type for that special content, modify the existing header under a different name to exclude the desired content, and include the newly created and named header in the new page type.

Naturally, you'll need to install the page type to make it available to your theme. Flushing and turning off the cache will help those changes appear immediately.

Fergus,
The only way I know how to make a new header is to get to your concrete files. Are you on a cpanel? You need to log in and modify there.

Strongly suggest doing a whole copy of your theme and making the changes to your new copied theme.

You'll want to make something called:
specialheader.php or something like that

If you need to learn how to copy a theme ( especially if it's a core theme). There is a great tutorial by Talacman
