How to edit email response when user submits form

I have 2 forms on my site. One is a straight "Contact Us" the other a "Membership Renewal/Join".
I need to customise the email response that each form sends when the user submits either form. I've searched for days trying to find the file to edit.
Any help would be very much appreciated.
