How to use additional data with Gallery

On the Gallery Type tab, there is a list of additional attributes that can be display with pictures. I would like to add content in Name, Description, etc.

The items can be selected, but there seems to be no way to lock them in.

Anyone know?

FYI On the remote server where this behavior is occurring, there is no Caption field. On a Sandbox Ubuntu server the field is there and when selected, captioned data is shown.
