MailChimp Form -- Text isn't editable -- pop-up has drop down tab, no box (and, as a side note, the solution to "curl" is at the bottom of my question -- unrelated to MailChimp.

As everyone knows by now, I'm following Remo's book -- Concrete5 for Beginners -- and I'm LOVING Concrete5. Whipping right along with really little frustration any more. But with that said ...
... put in the MailChimp that's in the add-ons. It dropped in fine, but I'm using the Chocolate Theme background and the text doesn't show. Went into edit and a pop-up appears; however, there appears to be somesort of drop-down option, but the arrow button is smooshed right into the white box so I can't see what, if any, options are available. If this pop-up isn't the way to change the color of the text in MailChimp (the C5 version), can someone please tell me how I can do it?
By the way, if anyone out there is having problems seeing previews of the Themes and get an error of "Curl not installed", found a link on the web with instructions on how to find and change the code (I should say -- simply remove the semi-colon to enable it. But you have to find the code first. Any way, the instructions are at the ACMEOUS site. I'm not a techny, but followed the instructions and actually found it! Deleted that "disable" code -- e.g., the semi-colon -- and it's working! My infophp now shows I have "curl" and I can preview the themes -- yeah!
