Managing stack contents

When I try to change the stack contents of the sidebar on the About us page of the Greek Yogurt theme, I see the "Manage stack contents" link as the tutorial / docs describe. But when I select it, I don't see the "Editors Content" panel displayed in the tutorial but rather an auto nav block.
Yet, one of the links in the sidebar is an external link, so it seems unlikely it was put there by auto nave code.
I seem to keep running into difficulties understanding these automated elements in c5.
I used the sitemap to move the guestbook to the main menu (replaced auto nav with manual nav), but I wanted a link to it in the sidebar of the About us page. I didn't like the highlighting to be "on" for both guestbook and About us and the move solved that issue.
If someone could explain the right way to edit these blocks, like the stacks block it would be great. I'm a bit confused with what I read in the docs and how the Greek Yogurt theme behaves.
Another is the blog page, where a page list is shown. The default theme has April - July, and these look like parameters for a search, as there are no pages named April, May, June or July under the blog archives.
